Bresaola Gran Ginestra is made from selected cattle. Only the best topside cuts are selected for their size and colour. Processing takes a long time because of the size and there are special techniques to ensure that the meat has a unique consistency and appearance. Deep red in colour, its flavour is intense and naturally sweet and spicy, while the consistency soft and springy.
Rovagnati bresaolas are first class charcuterie with the best parts: haunch tip and eye of round, skillfully trimmed and seasoned before curing.
