A traditional culinary gem from the Valtellina region, produced with fresh meat from Italian cattle born, reared, slaughtered and processed in Italy and in full adherence to ancient artisan methods. The raw material is skilfully trimmed, massaged with salt, seasonings and spices, and finally, slowly cured.
